Apple-Potato Soup 1 onions, sliced 2 T oil 1 large celery root bulb, peeled and cubed 2 large apples, peeled, cored and cut 1 medium russet potato, peeled and cut 1 can cannellini beans, drained and rinsed ½ cup apple cider 3 cups water (approximately) 1 tsp salt ½ tsp ground pepper ½ cup whole milk Cook onions in oil over low heat until tender. Add in apples, celery root, potatoes, beans, cider, salt and pepper and enough water to cover everything. Simmer for 45 minutes until everything is tender. Add milk. Puree. Check seasoning and consistency. Makes 6-8 servings.
